What basic vocabulary can I learn in Italian to get a head start?

Additionally to what Paul said, you could also start off learning how to count till about 20, the weekdays, months, but also basic vocabulary you see around you, e.g. the bed, closet, window, table, chair, and so on.

I think it's quite motivating to take into consideration of what's right around you and learn what it's called in Italian to build up your stack of vocabulary :)

I've avoided "Ciao" which is less formal.

I'd also add "I'd like" which is vorrei, good for all transactional dialogue
